The extraction process used to produce our extra virgin olive oil is as follows: <br />The olives are harvested and sorted by hand. They are harvested and directly from the tree, which means that we do not wait until they fall on the ground. <br />We wash the olives and remove the leaves and then the extraction, without application of heat, takes place within 12 hours of the harvest. <br />We obtain our product using natural and traditional methods of extraction (cold natural dripping - sinolea method).
